Processing Notes
Malted flour, malted wheat flakes, malted barley flour and malted rye grains do not automatically make a bread ultra-processed. The seeds add texture and nutrition but are still recognisable food ingredients. Flour fortification with calcium carbonate, iron, niacin and thiamin is standard fortification rather than an ultra-processing marker.
