Processing Notes
Biga is a traditional pre-ferment and is generally closer to conventional bread-making than modern formulation ingredients. Fortified wheat flour, malted barley flour, malted barley and yeast do not automatically make bread ultra-processed under NOVA. The ingredient list remains close to traditional bread-making and avoids added oils, fermented wheat flour, added wheat gluten and modern additive systems.
