The added extra virgin olive oil and olive inclusions make it more formulated than a very traditional sourdough made only from flour, water, salt and starter. The olives also contain acidity regulators or acids, including lactic acid and citric acid, but these are within the olive ingredient rather than an industrial additive system for the bread itself. Fortified wheat flour and malted barley do not automatically make this ultra-processed under NOVA.
