Processing Notes
Fortified wheat flour does not automatically make bread ultra-processed. Calcium carbonate, iron, niacin and thiamin are standard flour fortification nutrients rather than modern formulation additives. The ingredient list remains close to traditional bread-making and avoids added oils, fermented wheat flour and added wheat gluten.
